Coursework Details
American's online Certificate in Nutrition Education consists of six courses delivered 100% online. Electives are built into the curriculum for a customizable learning experience.
This 18-credit program gives you the skills to translate research and theory into practice, providing a deep understanding of nutrition approaches and health recommendations throughout the lifecycle. Most students finish the program in 12 months.

HLTH 610 Life Cycle Nutrition (3) This course explores the role of nutrition through the entire life span. Beginning with conception, pregnancy, early childhood feeding, adolescence, adulthood, and the elderly, each lifecycle is discussed with an understanding of the physiological changes and their implications for nutritional factors. Special emphasis is placed on using this information in nutritional education programming.
HLTH 630 Nutrition Education Methods (3) In this course, students explore the current status of nutrition and nutrition education in the United States and identify the factors that influence nutrition status. Students learn to perform a needs assessment and design and implement educational strategies.
HLTH 645 Nutrition for Health (3) The role of nutrition in maintaining health and physical fitness is studied in relation to the responsibilities and opportunities of a nutrition educator. Current food myths, diets for those in athletic programs, and special needs of overweight and underweight clients are included.
HLTH 655 Vitamins and Minerals (3) This course explores the role of vitamins and minerals in maintaining cellular health through biochemical and physiological mechanisms. Topics provide an in-depth view of specific vitamins and minerals as well as effective ways to translate this information toward efforts for the prevention of chronic disease.

HLTH 525 Health in the School Environment (3) Examine the promotion of healthy behaviors and beliefs in the school setting from early childhood through higher education based on the Center for Disease Control's Division of Adolescent and School Health coordinated school health program model.
HLTH 530 Sports Nutrition (3) This course allows students to translate theory into practice and to relate content to fitness and sports. Included are topics on weight and body composition, eating disorders, and guidelines through proper nutrition. The material covered gives students a comprehensive knowledge of nutrition for use in complementary fields focusing on sport and exercise.
HLTH 570 Strategies for Weight Control (3) This course is designed to address the strategies used to assist in reversing the obesity epidemic. Students gain an understanding of the trends of obesity, risk factors associated with being overweight, and chronic disease patterns. Further, strategies of proper weight management are explored on an individual and societal level, looking at current diet trends and evaluating their health implications.
HLTH 625 Nutrition Epidemiology & Research Methods (3) In this course, students learn how to design, implement, and analyze studies involving nutrition-disease associations. Research methods and challenges are assessed in relation to epidemiology, focusing specifically on food and nutrition.
HLTH 640 Nutrition Program Design (3) Nutrition Program Design introduces students to advanced principles in program planning for nutrition education activities. Building on nutrition education methods, this course emphasizes the development, implementation, and evaluation of nutrition programs to effectively reduce the risk factors associated with chronic disease and improve health.
HLTH 641 Health Communication (3) This course addresses distinct forms of delivering health promotion messages to consumers, professionals, and large groups through various communication methods and social marketing. The course is divided into three modules, covering health coaching, mass health communication, and consumer health writing, and public speaking. Students have the opportunity to coach individuals, advocate for a health issue, or give a presentation on a health-related topic.
HLTH 650 Behavior Change in Health Promotion (3) This course provides students with an overview of the theory and application for assisting individuals and groups change lifestyle behaviors related to health promotion. Includes cognitive behavior techniques to change lifestyle behaviors such as smoking, obesity, stress, or diet for the reduction of chronic disease risk. Students deepen their understanding of select theories and practices necessary for effective health behavior change.

Distance Program
The Distance Dietetic Internship is a nine-month program that provides 10 hours of graduate credit through the internship and supervised practice experiences during rotations in Clinical, Community, and Food Service.
Effective January 1, 2024, the Commission on Dietetic Registration (CDR) will require a minimum of a master’s degree to be eligible to take the credentialing exam to become a registered dietitian nutritionist (RDN).
Program Overview
The program prepares students to be competent entry-level registered dietitian nutritionists and lifelong learners in the community by providing a variety of opportunities to increase their capacity for inquiry, logical thinking, critical analysis, synthesis, and leadership as they apply theory to practice. Individuals will develop skills in the areas of clinical nutrition, community nutrition, and food service management. It is intended for the distance dietetic internship to be completed during or after the online MS in clinical or community nutrition.
As a student in the distance dietetic internship, you will have the flexibility to create your experience anywhere in the United States with the approval of the program. The distance dietetic internship program has developed relationships with preceptors across the nation to help support you as you build your supervised practice schedule.
This distance dietetic internship is approved to match 60 interns. The program may preselect applicants who are already taking graduate courses in the department.
The program uses the pre-select application process to accept students already enrolled in the online MS in clinical and community nutrition. If additional openings are available, the program will use the online centralized internship application, Dietetic Internship Centralized Application Services (DICAS). Acceptance into the distance dietetic internship is contingent on acceptance into the online MS in clinical and community nutrition.

The DI is designed to meet or exceed each of the Competencies/Learning Outcomes for a Dietetic Internship Program, as established by the Accreditation Council for Education in Nutrition and Dietetics of the Academy of Nutrition and Dietetics. Completion of the University of Illinois distance DI Program fulfills all CDR requirements for supervised practice hours in order to take the Registration Exam.

Code of Ethics for the Profession of Dietetics
All interns are required to follow the Code of Ethics for the Profession of Dietetics published in the Journal of the Academy of Nutrition and Dietetics, 2009; 109:1461-1467
The Academy of Nutrition and Dietetics and its credentialing agency, the Commission on Dietetic Registration, believe it is in the best interest of the profession and the public it serves to have a Code of Ethics in place that provides guidance to dietetics practitioners in their professional practice and conduct. Dietetics practitioners have voluntarily adopted a Code of Ethics to reflect the values and ethical principles guiding the dietetics profession and to outline commitments and obligations of the dietetics practitioner to client, society, self, and the profession.
The Ethics Code applies in its entirety to members of The Academy of Nutrition and Dietetics who are Registered Dietitians (RDs) or Dietetic Technicians, Registered (DTRs). Except for sections solely dealing with the credential, the Code applies to all members of The Academy of Nutrition and Dietetics who are not RDs or DTRs. Except for aspects solely dealing with membership, the Code applies to all RDs and DTRs who are not members of The Academy of Nutrition and Dietetics. All of the aforementioned are referred to in the Code as "dietetics practitioners." By accepting membership in The Academy of Nutrition and Dietetics and/or accepting and maintaining Commission on Dietetic Registration credentials, members of The Academy of Nutrition and Dietetics and Commission on Dietetic Registration credentialed dietetics practitioners agree to abide by the Code.
During the DI, interns enroll in FSHN 590 Dietetic Internship I in the fall semester and FSHN 591 Dietetic Internship II during the spring semester. Course information can be found on Illinois Compass.
The objective of the FSHN 590 and 591 lectures and supervised practice is to equip interns with the following knowledge and skills:
- Integration of fundamentals of biological and physical sciences, theories of culture and behavior, learning, management, and social interaction as they relate to human health.
- Application of the concepts of human biological, social, and psychological development to health and disease.
- Application of administrative and clinical expertise in hospital-based and community settings.
- Active enlistment of current research techniques and findings in administrative, clinical, and community areas of practice.
- Eligibility to sit for the Registration Examination of the Academy of Nutrition and Dietetics.
- Preparation to function as entry-level registered dietitians and ultimately become leaders in the profession of dietetics.
Supervised Practice
Distance interns will complete supervised practice sites on M-Th or M-F, depending on the location of the site. The DI program is full-time, beginning in August and ending in May each year. The program:
Rotation Sites
As a student enrolled in the distance dietetic internship program, it is the responsibility to secure their own supervised practice sites and have these approved by the program director no later than March of the year you are planning to start supervised practice.

Internship Graduation Requirements
Students will be eligible for the registration exam after:
- Completion of rotations with a minimum of a satisfactory rating.
- Completion of graduate program requirements and deposition of a thesis.
- Receipt of an AND Verification Statement from the Internship Director following completion of rotations and deposition of a thesis. Completion of the graduate program is required to receive a verification statement.
- Completion of the Intern Exit Packet materials to prove exam eligibility. This packet will be distributed to interns ~1 month prior to the end of the internship. Students will receive confirmation from Commission on Dietetic Registration (CDR) when all forms have been received and the student is eligible to take the registration examination.
Internship Policies and Procedures
The University of Illinois DI has established a set of policies and procedures to direct the administration of the program and to delineate the rights of dietetic interns and the expectations of behavior within the internship. All policies and procedures are fully described in the Policies and Procedures (pdf) .
Prospective Students
Who can apply?
The University of Illinois DI Program is accredited to accept a maximum of 60 interns per year and is restricted to students who have earned at least a bachelor's degree and DPD verification statement from an accredited school. If you are planning to complete the DI, please email Dr. Jessica Madson, so that she is aware of your interest and can set an appointment to meet with you. At that time, she will discuss your timing of application to the DI.
Applicants are required to provide a Verification Statement (complete or from an accredited Didactic Program in Dietetics (DPD)). In addition, DI applicants are expected to have completed volunteer or work experience in clinical nutrition, community nutrition, or food service settings.
What if I have not met the DPD requirements or do not have a Verification Statement?
In order to enroll in the DPD program (courses, clinical experience, RD mentor), you will need to complete the Application for Concurrent Enrollment in the Didactic Program in Dietetics (DPD) and University of Illinois Graduate School (doc). Once you have completed this form, it should be submitted to Dr. Justine Karduck, the Director of the DPD in the Department of Food Science & Human Nutrition. Note that this application will require signature approval by your graduate advisor. Acceptance into the DPD program is not guaranteed and will be dependent upon performance in previous coursework and the availability of space in undergraduate courses. Once Ms. Karduck has approved this application, Dr. Madson can assist you in planning your program of study.
How do I apply to the DI?
Pre-select Option to Computer Matching
The University of Illinois DI participates in the pre-select option. In the pre-select process, the program can select up to 60 students per year who have met the admission requirements for the DI. The DI Director then informs D&D Digital Systems which applicants have been matched to the University of Illinois DI for the upcoming year. Applicants cannot match to the University of Illinois DI through computer matching the D&D Digital Systems. However, if an applicant is not matched to the University of Illinois DI, they can apply to other internships through the computer matching process.
Application Process
Applicants must submit the following materials to the DI Director (Dr. Jessica Madson, 363 Bevier Hall) by November 15th (or the next weekday closest to that date) of the fall prior to the year you intend to complete the internship:
- Cover letter summarizing your motivation for completing the RD and your career goals
- Dietetic Internship Application Form (doc)
- Degree Progress Form (doc) signed by your graduate advisor to verify they will have completed all graduate course requirements and a major portion of the thesis research prior to starting the dietetic internship program.
- Verification Statement (completion or intent to complete) from an accredited Didactic Program in Dietetics (DPD)
- Copy of Current Immunization Record
Three Reference Letters on the AND reference form (doc):
- At least 1 letter must come from an employer or academic advisor who has worked closely with the student.
- At least 1 letter must come from a professor or instructor.
In order to ensure confidentiality, letters of recommendation must be sent directly to the DI Director from the employer/instructor's office. Alternatively, letters may be sealed in an envelope and signed across the envelope flap by the employer/instructor and then submitted with the student's other application materials.
Copies of your undergraduate and graduate transcripts from your graduate application file will be obtained from the Department of Food Science & Human Nutrition or the Division of Nutritional Sciences office by the DI Director. You do NOT need to request copies of transcripts from previous degrees.
What are the costs of the DI program?
University of Illinois Tuition
If an intern is not being supported by an assistantship, scholarship or fellowship that provides that tuition and fee waiver, they will be responsible for tuition and fees. To view the current costs, please visit the Office of the Registrar's tuition and fee rates page. Tuition assessment is based on the total
number of credit hours being taken per semester. Both FSHN 590 and 591 are 5 credit hours, which qualifies as Range III.
Internship Participation Fee
In addition, interns are required to pay a fee for participation in the DI. The annual fee is $2,200. The fee will be directly billed to the student’s account. $1,100 will be charged before the beginning of the fall semester and spring semesters.

The University of Northern Colorado offers a distance-based track of the ACEND accredited Didactic Program in Dietetics (DPD) called the Distance Dietetic Program (DDP). Students complete the same curriculum as our on-campus program, however, it is designed to be more accessible for students particularly those who have employment and/or family commitments that preclude participating in a full-time on-campus experience. The distance track offers 15 courses online; the rest of the required courses are taken at a regionally accredited institution where you live or on-line and they transfer in. You may desire to complete your bachelor’s degree in dietetics or, if you already have a bachelor’s degree, you may choose to obtain a second bachelor’s degree or a certificate. Successful completion of the distance dietetics track will enable you to apply for dietetic internships and graduate schools on your path to becoming a registered dietitian nutritionist.
The UNC Dietetic faculty will advise you regarding which courses you have taken or are planning to take will fulfill the requirements for distance completion of the Didactic Program in Dietetics. They will help you design your schedule of pre-requisite courses to take in preparation for enrollment in the on-line courses. You may begin taking courses in a Distance Dietetic Program cohort if you have taken the Dietetics pre-requisites, you have been advised by your advisor, you meet the 3.0 or above grade point average requirement and there is space available in the courses. If you do not already have a Bachelor's degree, or if you plan to pursue a second Bachelor's degree in Dietetics, you can complete your first three years of coursework at a campus close to you and the last 30 credits online with UNC.
The Dietetics Program at UNC is accredited as a Didactic Program in Dietetics (DPD) by the Accreditation Council for Education in Nutrition and Dietetics (ACEND) of the Academy of Nutrition and Dietetics . Completion of UNC’s DPD is the first step on the pathway to becoming a registered dietitian nutritionist (RDN) or dietetic technician, registered (DTR). The steps to become an RDN are:
- Complete a bachelor's degree and receive a verification statement from an ACEND-accredited program ( Didactic Program in Dietetics, Coordinated Program, Future Graduate Program, Foreign or International Dietitian Education Program ) Note, effective January 1, 2024, a graduate degree will be required to be eligible to take the Commission on Dietetic Registration. - Complete an ACEND-accredited supervised practice dietetic internship program or Individual Supervised Practice Pathway is an option. Supervised practice/experiential learning is combined with the Coordinated Program, Future Graduate Program, and International Dietitian Education Program .
- Pass the Commission on Dietetic Registration's dietetic registration exam .
- Gain licensure in your state of practice, if applicable.
- Maintain continuing education .
Beginning January 1, 2024, the Commission on Dietetic Registration (CDR) has changed the degree requirement for dietitian registration eligibility from a Bachelor's degree to a Master's degree (in any field) in addition to the current requirement of a verification statement from an ACEND accredited dietetics program. Entry-Level Registration Eligibility Requirements Update
The Commission on Dietetic Registration website provides information regarding the plan and timeline to initiate the new entry-level practice requirements of earning an advanced degree along with completing supervised practice and taking a registration exam.

About the programme.
Eating is so much a part of life that we tend to assume that we know everything about food. It is generally believed that provision of proper nourishment is mainly a question of income. This is a fallacy, since nutritionally rich foods are available at a reasonable price.
Since food sustains life and accounts for a major portion of our living expenses, it will be useful for everyone to know about:
- The nutrients contained in different items of food;
- The needs of the human body in terms of various nutrients at different stages of life;
- Consequences of taking more/wrong types of food;
- Ways of selecting food articles, and the techniques for processing, cooking and preserving them.
The focus of the Programme is to enable you to make the best possible choice for meeting the nutritional needs of your family. At the same time it aims at helping you choose an adequate variety of foods to suit the taste of each individual in your family. In addition, you will learn about the nature of food-borne diseases and the importance of good food habits in preventing them. You will also be acquainted with schemes of quality control, consumer rights, etc.
Diploma Programme in Nutrition and Health Education (DNHE):
The programme is unique in that it offers specialized training in nutrition and health education particularly in planning and conducting education programmes at the community level.

The Diploma of Nutrition provides foundational knowledge on health science and the role of nutrition in health. Kickstart a career in nutrition by exploring the full spectrum of human anatomy, physiology and chemistry, and how they relate to human nutrition, digestion and metabolism.
This online diploma promotes improvements in general health and wellbeing at each life stage and for Indigenous communities at the population level. You'll learn practical skills such as how to apply the Australian Dietary Guidelines and Nutrient Reference Values to dietary assessments and planning. Upon completion, you’ll have the option to begin a fulfilling career or continue studying with the Bachelor of Nutrition.

Biological Foundations explores the biological building blocks which make up the human body from the chemical level up to the cellular level. These essential chemistry concepts will assist with building relevant links to the study of human physiology in later subjects. The subject then explores the foundational studies in biochemistry which includes the structure and function of carbohydrates, proteins, enzymes, lipids, DNA and RNA. The concepts of gene expression and regulation are discussed in addition to the cellular membrane structure and transport through the membrane. The study of the biology of the human cell concludes this subject and upon completion equips students to commence study at the tissue level of structure and physiology subjects.

Human Nutrition 1 (NUTR2001A) provides a detailed and in-depth study of the macronutrients, protein, carbohydrates and lipids, as well as the water-soluble vitamins and how these relate to human metabolism. Each individual macronutrient and water-soluble vitamin is studied in regards to their composition, biological function, dietary sources, recommended daily intake, factors contributing to excess states, and states of insufficiency and deficiency; and signs and symptoms associated with nutrient imbalances found in individuals and populations. Students will investigate how the management of these nutrients contribute to the public health agenda.

This subject aims to provide an understanding of the sociology of food, nutrition and public health. Students will explore the relationships between human behaviour and dietary intake from a public health perspective. This subject will provide students with a solid understanding of the social and environmental determinants of health as it relates to nutrition. Students will be engaged in community-based research, to identify a public health issue which is prevalent in their community society.

Human Structure & Physiology 1 introduces the basic concepts and terminologies required to study and understand the structure and function of the human body. This subject will build on the biological foundations by exploring the interaction and organisation of cells, tissues and organs which forms a basis to study the physiological integration of key body systems. The maintenance and regulation of the internal environment by homeostasis at a system level will be key to students understanding disruption and disease in later subjects. Key physiological and functional processes such as movement, metabolism, oxygenation, and protection will be discussed, with body systems including the integumentary, musculoskeletal, respiratory and cardiovascular system the focus of this subject. This subject will provide the first part of an evidence based foundational knowledge of human physiology to guide health practice.

Evidence-based practice is an essential component of the exercise of clinical judgement in the delivery of quality healthcare. Students will also gain an understanding of how research evidence is translated into practice. This subject provides students with an introduction to health informatics, research and digital literacy, critical thinking and evidence-based practice. Students are guided through the skills necessary to locate, critique and interpret a research article for application to their practice. They will become familiar with quantitative and qualitative evidence, research methodology, basic descriptive and inferential statistics and the foundational skills to be able to evaluate and appraise evidence in healthcare research.

Human Nutrition 2 (NUTR2002) provides a detailed and in-depth study of the micronutrients and how these relate to human metabolism. This subject provides students with underpinning knowledge about the correlation that exists between micronutrients and human physiology. Each micronutrient’s structure, biological function, dietary sources, recommended daily intake and therapeutic dose is studied. This subject also covers the factors contributing to, and symptoms associated with, states of excess, insufficiency and deficiency found in individuals and populations. The role of nutrition and lifestyle factors in the development of chronic disease is examined. Furthermore, students will be introduced to the concepts of genetically engineered food. They will discover how food-borne illnesses can be prevented and identify environmental contaminants in the food supply. This subject also explores the current scientific literature, enabling students to determine the appropriate use of dietary supplementation.

Human Structure & Physiology 2 will further develop knowledge of the structure and physiology of the human body with special attention given to the integration of human systems and beginning to explore the impact of disturbances in Homeostasis and disruption of normal function. The structure and function of the lymphatic, immune, digestive, nervous, endocrine, urinary, reproductive systems and the special senses are covered in detail including the homoeostatic control mechanisms of each system and the integration of the systems in the body. This subject builds on the knowledge and understandings of human structure and physiology, provides the foundation to look at disease, disorders and syndromes and their pathophysiology, in later subjects.

Lifespan Nutrition (NUTR2005A) examines the range of nutritional requirements that impact populations, communities and individuals at particular life stages including pre-conception, pregnancy, during lactation, early childhood, adolescence, adulthood and ageing populations, as well as the specific issues affecting Indigenous communities, sports people and other at risk populations. This subject provides an overview of dietary patterns and eating habits by age group and dietary recommendations for optimal nutrition to maintain wellbeing at each life stage.

DNHE or Diploma in Nutrition and Health Education is a one-year diploma certification course in which one will be skilled in Nutrition Science and Public health education. The minimum eligibility criteria for DNHE admission includes 10+2 Level certification from any recognised board.
Admission to DNHE is selective and is done through both merit and entrance tests. However, some institutions might take an interview before giving admission. There are lots of faculty members in this college for every stream. They teach us politely and also care about us. They are very helpful to students in all aspects. Many courses are available in this college for students. If a student does not understand any topic, the faculty members teach it as many times as the students wants so that they can understand.
Classrooms in this college are very neat and clean, and the laboratories are also air-conditioned. The medical facilities they provide for students are very good. An annual sports fest is organised every year in the college ground, and students participate in various sports. Both vegetarian and non-vegetarian food is available in the canteen.

Course OverviewMSc (DFSM) is a multimedia package, which includes print material and audio-visual material. The programme is multidisciplinary in nature. Teleconferencing Teleconferencing is a one-way video and two-way audio facility. Teleconferencing will be held every month. During teleconferencing session, you will get an opportunity to interact by phone in facility or fax with the resource persons/experts who participate in teleconferencing session and clear your doubts immediately. The teleconferencing facility will be available at the Regional Centre and Selected Study Centres. The teleconferencing schedule will be sent to the Programme In-charge and Regional Director who would inform the students. Teleconferencing is done through Gyan Darshan Channel. You must regularly attend these sessions. These will help you to clarify doubts and interact with other learners all over the country. Radio Counselling Radio counselling will be held through FM. and you can ask questions free of cost with phone in facilities right from your home. A toll free telephone number 110012345 has been provided for this purpose. The Programme will also be telecasted through DD metro channel and schedule will be informed to students in advance. Audio-video Programme Audio and video programmes for each course have been prepared to support your learning. These Audio-video programmes in the form of cassettes are available at all Programme Study Centres. These Audio and video cassettes will be provided for viewing and listening. You can also hire the cassettes for viewing and listening. You will be required to complete seventy-five percent attendance in theory counselling to become eligible for appearing in Term-end Examination. Similarly, you will be required to complete ninety percent attendance in practical contact sessions to become eligible for appearing in practical examination. Continuous Evaluation of Theory Component Assignments Assignment is a means of continuous assessment of theory and practical. Assignments will help you to recapitulate the theory and go back to the text again in case you are unable to answer a particular question. Thus assignments also help to reinforce learning in distance learning system of education. These assignments consist of a set of questions and activities that you will answer at your own place by referring your blocks. The assignments will cover all types of questions (long answer type, short answer type, objective type, multiple choice questions and case studies). The assignments will carry thirty percent weightage. You will be required to obtain fifty percent marks as pass percentage in each assignment separately. Each assignment will carry 100 marks. In the final result assignments will carry thirty percent weightage. Term-end Examination As stated earlier, term-end examination is the major component of the evaluation system and if carries seventy percent weightage in the Final result. The University conducts term-end examination twice a year i.e., in June and December. You can take the examination only after completion of the course, failing which you can take the same in December or June of subsequent years years within the total span of the programme. In case you fail to get a pass score in the Tern-end Examination, you will be eligible to reappear at the next Term-end Examination for that course as and when if is held, within the total span of the programme.
