Cassava (Manihot esculenta, Crantz) is a food security crop and serves almost 250 million people in subSaharan Africa as global food security is in question today. Gari samples from nine different processing sites in the central region of Ghana were sampled and the effect processing equipment on the quality of gari produce at these processing sites was assessed. The samples were analysed for pH, TTA, starch, bulk density, moisture content, swelling capacity and ash content using A.O.A.C 2000 and other recommended protocols. Samples were found to have good pH level (3.745-4.685) with a low TTA (0.009-0.016). The samples had adequate moisture (4.469-7.763%), low level of ash (0.623-1.677%) with bulk density (0.588-0.666g). The samples swell at a very good rate (3.175-3.750%) which is acceptable to most consumers. Gari, the most commercialized cassava product in Ghana continues to increase in production due to the increasing urban demand and export market potential. Therefore, many small scale processors are involved in the production of gari with the potential for quality variation. Studies were carried out on gari samples from selected gari processing centres within three regions in Ghana. Physical parameters such as colour, extraneous matter, particle size and swelling capacity and, chemical factors such as moisture, crude fibre, ash content, pH and total acidity were measured.The results showed that the quality of the gari samples from the selected centres was good and many of the samples met both the international and national specification for good quality gari processing. The moisture content was found to be low (4.39–7.44%) with an appreciable total acidity (TTA, 0.63–1.55% and pH, 3.60–4.47). Almost all the samples were found to have very good swelling capacity (>3.0), low level of extraneous matter (0.03–0.09%) and appreciable level of crude fibre content (1.47–2.50%) with a creamy/yellow colour which is acceptable to consumers. Although the ash content was very low (0.72–1.96%), particle size was quite good (0.63–1.02 mm). There were some variations in sample quality which may be attributed to method of processing and variety of cassava.

Gari, a West African staple food was processed using fresh cassava tubers (TMS 30572 cultivar). Material losses and garification rate index as affected by the cassava ages of maturity, fermentation days and processing stages were determined. The material losses and yield of gari from 9, 12 and 15 months old cassava plants at different processing stages and fermentation days were evaluated. Results showed that the average peeling loss at different maturity ages ranged between 21 and 28.86% while percentage grating loss ranged from 3.71 to 5%. Likewise, estimated percentage dewatering/fermentation loss ranged from 25.55 to 30%, while sieving loss ranged from 4.24 to 5.14%. Garification losses ranged from 17.45 to 19.79% with an average gari yield between 19.86 and 23.68%. Cassava of 15 months maturity age generally produced higher yields of gari than those harvested early. The mean garification conversion rate achieved was 22% (0.22, wt/wt).

The global energy narrative is pushing for the deep decarbonisation of energy-consuming systems. This paper seeks to assess cassava (a staple food in West Africa) production potentials in Nigeria and to technically evaluate the garri production process as well as to study the effect of storage duration on the quality of the garri. Available data indicate that there were wide variation in cassava production potential in Nigeria between 1961 to 2020 with appreciable increase of cassava production occurring within the period 1981 to 2000. Identified factors such government policies and interventions; cassava virus and bacteria are responsible for this variation. Garri has several value chains with roasting playing a dominant role in the energy consumption and quality. Garri was produced using three fermentation pathways with each product stored in three different types of storage containers (plastic container with cover, airtight polythene bag and ordinary polythene bag) for 15 weeks and monitored regularly for quality purposes. Results obtained indicated that fermentation duration, with the exception of acid content, does not significantly affect the moisture content, swelling index and bulk density of garri within the period under investigation. These results will be useful for designing an improved environmental friendlier and climate responsive garri roasting process unit powered by solar energy in the context of energy efficiency and quality control.

Cassava is a multipurpose crop for man and livestock. Cassava starch is an ingredient in the manufacture of dyes, drugs, chemicals, carpets and in the coagulation of rubber latex. The way forward is the design of appropriate mechanical device and system for sieving dried cassava flakes (Garri). This project seeks to design and fabricate an improved garri sifting machine. There is need for the development of commercial scale garri sifting machine where the roasted garri can be properly monitored. Some design considerations used in this project include efficiency, portability, and safety of operations. Adequate care of chemicals present in cassava juice was considered in selecting materials for fabrication of the machine. The machine was damped to reduce noise pollution during its operation. One of the most important steps in the cassava-to-gari processing chain, is the breaking into tiny particles of the de-moisturized grated white paste cassava that can easily be garified into dried gari. Lump breaking and sieving is commonly done by hand to remove ungrated and tread like cassava. A faster method of lump breaking and sieving in gari production necessitated the need for the designing of the motorized gari sieving (sifting) machine, aimed at reducing or completely eliminating all problems associated with sieving of gari. As output of the machine increased per day, promote hygiene improve the quality of gari and save time when compared with the traditional method of sieving. The machine is made of the main frame, hopper, lump breaker, sieving chamber and equipped with a 0.75 kW motor operating at 1400 rpm. The performance was evaluated and this reveals an average sieving rate of 0.033 kg/s and a mean efficiency of 78%.

The following are the primary phases in the garri-producing process:

  • Sorting the cassava tuber : Some roots of the cassava tuber may be damaged or decayed after harvesting. These are sorted in order to pick the wholesome roots for processing; only healthy roots (i.e., those that are free of rot or other damage) should be used in the processing procedure.
  • Cleaning and peeling cassava roots:  Freshly gathered cassava roots are coated with soil and dirt, and they must be washed and peeled. In the garri production process, the roots are peeled to remove the outer brown skin and the inner thick cream layer, and they are then cleaned to remove stains and debris. It is important to check the water supply on a regular basis to ensure that it is not filthy or polluted.
  • Grating of the cassava : Gratification of cassava is a step in the process of removing cyanide and making the root suitable for consumption. Automatic graters are needed in the cassava mash manufacturing process in order to make enough cassava mash to meet market and industry needs.
  • The de-watering and fermentation stages : This is where the cyanide in the cassava mash is removed. The amount of water in the mash is reduced by the use of a hydraulic press. After that, the bags are left to drain and ferment for a few days before being used again.
  • Granulating: Cassava mash is mechanically reduced in size, resulting in fine granules with a higher surface area, also known as grits.
  • Gari frying: The grits are roasted or fried in a hot frying tray or pan to produce a dry and crispy texture. Garri is often white or cream in color, although it can be yellow if prepared from yellow cassava roots or fried in palm oil. Gari is created from yellow cassava roots or fried in palm oil. It is critical to ensure that the flavor and odor are acceptable to local customers before proceeding. Gari is made from yellow cassava roots and palm oil, which are both high in vitamin A and provide a nutritious source of energy. They are stretched on a high platform in the open air to cool and dry after they have been roasted.
  • Sieving : The Gari is sieved to remove coarse particles, and a standard-sized sieve is used to generate fine granules from the coarse particles once they have been separated. The big grains are broken down into smaller pieces with the help of a grinder.

Cassava is God’s gift to the tropics because it can grow in poor soil with inadequate rainfall. The starchy roots of cassava are major source of food for more than 700 million people all over the world. It ranks third in order of staple food crops in developing countries after rice and maize. It is called Manic in French, Tapioca in Latin America, Mandioca in Portuguese and Yucca in Spanish. It has universal applications.

Nigeria is the world largest producer of Cassava. We produce over 41 million metric tones per annum and we are followed by Brazil, Thailand, Zaire (now Democratic Republic of Congo), and Indonesia. Thailand does the largest global business in cassava because it is not part of their food security. They export over $20 billion worth of cassava products annually.

Nigeria has tried to expand the local cassava business through the Composite Flour Initiative and the Cassava Empowerment Fund but so far, they have attained little or no success. Cassava is produced in all the Southern and Middle Belt States of Nigeria.

It is produced from Cassava Tubers and is the commonest stable food in Nigeria consumed by over 130 million people. We consume about 7.7 million tons of gari per year and it comes to about 30.7 million tons of our cassava production.

This shows that about 75 percent of our cassava out put is consumed as staple while only 25 percent is used as raw materials for starch, chips, pellets and flour which are industrial raw materials that can be exported. Our actual annual demand for gari is 12 million tons but to accomplish this, the production facilities must be improved and up graded and Cassava Product must also improve.

Our population grows at the rate of 3.5 percent annually and this means that the food capacity must also grow commensurately. Gari is produced in the rural areas by local women and the process is full of drudgery and stress thus most of them are giving up the trade and the younger ones are not interested because they prefer life in the cities. The modern Gari Processing Plant is designed to fill this void.

4. EQUIPMENT AND PRICE

The heart of this Modern Gari Processing Plant is the Roasting or Frying Pot which is made of Stainless Steel and insulated with fiberglass to absorb heat from the fire. It is powered by 2HP gear motor that rotates the paddles that continuously turn the frying gari mash. The full lists of the equipment are:

1 (NO) Stainless Steel; HAMMER Mill with 15 HP Electric Motor Capacity – 1 ton / hr. 4 (NO) Fermentation Racks 4 (NO) Hydraulic Jack (Mechanical) Press Capacity 1 ton / hr. 1 (no) Stainless CAKE Granulator with 7.5 HP, Motor, 1 ton / hr. 2 (NO) Gari Roasting / frying Pot with 2 HP Gear Motor, Exhaust Pipe and can be fired with Firewood, Charcoal etc. 2 tons / day.

4.1 PRODUCTION CAPACITY

The Hammer Mill or the Cassava Grating Machine and the Granulating Machine have capacities of 1 ton per hour.

This means that within one day of 8 hours, they will process 8 tons of cassava mash. The two frying machines will then roast or fry them into two tons of gari or 40 bags of 50kg per day. Four tons of cassava tubers produce one ton of gari. The capacity of the plant is therefore 2 tons of gari or 40 bags of 50kg per day of 8 hours. Output will increase if production hours increase.

4. 2 THE PRICE OF THE PLANT

The price of the plant is N5 million (Five Million Naira). It is rugged, resilient and made of stainless steel to satisfy both SON and NAFDAC requirements. It reduces drudgery and stress which are the bane of local gari production.

The gari has moisture content of 10 percent, sand of less than 1 percent and hydrocyanic acid of less than 10 percent.

The shelf life is over six months and the gari is hygienic and free of microbial contamination and infestations.

5. TERMS AND CONDITIONS OF PURCHASE

80 percent of the price will be paid at commissioning, 10 percent after delivering, and before installation and 10 percent after installation and test run.

Civil works for the mounting of the machines and electrical connections will be the responsibility of the client.

Delivery Period: Delivery of the machines shall be 8 weeks from the payment of the 80 percent and the clearing of the cheque.

Transportation: The transportation will be born by the client. We envisage that one 911 truck or 20 feet container can carry one plant.

Installation: Our technicians will install and test run the plant. The client will provide the central gear switch of about 100 amps, motor starters and gear switches. We will do the bases for the hammer mill and the granulator but the client will provide the materials. It will take a maximum of 1- 2 weeks if the electrical connections, water, power etc are in place. The client will take care of their accommodation, transportation, feeding etc. The production space should be about 200 squaremeters and frying pots should be located in a well ventilated location.

Test run: About 5 tons of cassava tubers shall be required for the test run and it will be provided by the client.

Training and commissioning: Your operators: Technician (1), welder (1) and electrician (1) will be trained during the installation. They are therefore encouraged to participate in the installation and commissioning.

Warranties: 6 months for any production problem excluding changeable parts affected by aging, misuse and accidents.

Technical support: Supply of spare parts at short notice, maintenance, quality control to ensure standard and consultancy services when needed.

Validity: This quotation is valid for 90 days from the date of submission after which the price may change.

6. PROFITABILITY OF THE PROJECT

6.1 Assumptions

1. The conversion rate of tubers to processed gari is 4 tons of cassava tubers to 1 ton of gari. 2. That 1 ton of cassava tuber delivered to the plants is N 5,000 per ton. 3. That the other costs of production are not more than 50 percent of the cost of cassava tuber .i.e. 50% of N 20, 0000 which is N 10,000. 4. That the selling price of one 50kg bag of gari is N5,000

6.2 Profit forecast

The project will retire all debts after the first year of operation and return a profit of about N 1,260,000. This shows that it is viable and feasible. It can also retire the debt within six months if it operates on two shifts per day. 7. OTHER APPLICATIONS OF THE PLANT

The plant can also be used in processing unripe plantain flour which is consumed mostly by diabetic patients. About 15 percent of our populations are diabetic and the number is increasing rapidly because of our eating habits.

Most states that produce cassava also produce plantain. Plantain is manually peeled, grated in the hammer mill and pressed in the hydraulic jack to dewater it. It is then granulated, roasted and finally milled again in the hammer mill to reduce it to the appropriate particle size. The demand for hygienically produced plantain flour is high because doctors often prescribe it for patients. It does not contain carbohydrate. It also has high export potential.

Garri processing Plants can also incorporate it in their activities to maximize profit during the plantain season. The unripe plantain must not be more than four days old before it is processed.

8. CONCLUSIONS

The plant is robust and versatile and will help in creating employment in the rural areas while enhancing the availability of gari. It will reduce the drudgery and stress in gari production and will also attract unemployed graduates to gari processing.

The profitability is impressive since it can retire all debts within the first year of operation and return a net profit at N1.26 million profitability will also increase if the shifts are increased. The plant can also be used in processing unripe plantain flour.

It is highly recommended to state governments, local Government and community Development Agencies who should use it in poverty alleviation, rural empowerment, employment creation and revenue generation.
