जंक फूड ऐसे फूड है जो उच्च कैलोरी और कम पोषकतत्वों से युक्त होते है। आधुनिक समाज में फास्ट फूड हमारे जीवन का हिस्सा बनता जा रहा है। आमतौर पर, जंक फूड देखने में बहुत ही आकर्षक और स्वादिष्ट लगते हैं और सभी आयु वर्ग के लोगों द्वारा इन्हें पसंद भी किया जाता है। लेकिन वास्तव में जंक फूड स्वास्थ के लिए काफी हानिकारक होते हैं।

जंक फूड के प्रकार

जंक फूड हमारे बीच बिस्कुट, चीज , बर्गर , पिज्जा आदि के रूप में पाए जाते है। जंक फूड स्वास्थ्य के लिए बहुत ही बेकार होते हैं और वे व्यक्ति जो नियमित रुप से इनका सेवन करते हैं, वे बहुत सी बीमारियों को आमंत्रित करते हैं। जंक फूड स्वाद से भरे होते है परन्तु उनमें पोषक तत्व नगण्य होता है।

जंक फूड के नुकसान

जंक फूड से हृदय संबंधी बीमारियाँ, कैंसर, समय से पहले अधिक आयु का लगना, उच्च रक्तचाप, हड्डियों की समस्याएं, मधुमेह (डायबिटिज़), मानसिक रोग, पाचन तंत्र की समस्याएं, लीवर संबंधित समस्याएं, ब्रेस्ट कैंसर आदि बहुत सी बीमारियाँ होती है। शोध के अनुसार यह पाया गया है कि युवा अवस्था बहुत ही संवेदनशील आयु होती है, जिसके दौरान एक व्यक्ति को अच्छे स्वास्थ्यवर्धक भोजन करना चाहिए।

अगर हम अच्छे स्वास्थ्य की कामना करते है तो हमें जंक फ़ूड का इस्तेमाल बंद करना होगा। हमें भोजन करने के उद्देश्य को समझना होगा। हमें भोजन स्वाद के लिए नहीं बल्कि स्वस्थ रहने के लिए करना चाहिए।

जंक फूड शब्द का अर्थ उस भोजन से है, जो स्वस्थ शरीर के लिए बिल्कुल भी अच्छा नहीं होता है। इसमें पोषण की कमी होती है और इसके साथ ही यह शरीर के लिए भी हानिकारक होता है। ज्यादातर जंक फूड उच्च स्तर पर वसा, शुगर, लवणता, और बुरे कोलेस्ट्रॉल से परिपूर्ण होते हैं, जो स्वास्थ्य के लिए जहर होते हैं। इनमें पोषक तत्वों की कमी होती है इसलिए आसानी से कब्ज और अन्य पाचन संबंधी बीमारियों का कारण बनते हैं। जंक फूड ने अच्छे स्वाद और आसानी से पकने के कारण बहुत अधिक प्रसिद्धि प्राप्त कर ली है। बाजार में पहले से ही निर्मित जंक फूड पॉलिथीन में पैक होकर उपलब्ध हैं। बहुत से लोग अपनी व्यस्त दिनचर्या या भोजन पकाने की अज्ञानता के कारण इस तरह, के पैक किए गए जंक फूड पर निर्भर रहते हैं।

स्वास्थ्य के लिए जहर है फ़ास्ट फ़ूड

जंक फ़ूड टाइफाइड, ह्रदय से जुड़े रोग, कुपोषण, हाइपरटेंशन जैसे जुडी भयानक बीमारियों का कारण बनता है। ये हमारे सोच से कई ज्यादा नुकसान दायक होता है। जंक फूड बहुत तेलीय होते हैं और उनमें पोषक तत्वों की कमी होती है इस कारण, उन्हें पचाने में काफी कठिनाई होती है और इनके क्रिया के लिए शरीर से अधिक ऊर्जा की आवश्यकता होती है और व्यक्ति के शरीर में ऑक्सीजन स्तर में कमी करते हैं, जिससे मस्तिष्क का उचित विकास नहीं होता।

जंक फूड शब्द का इस्तेमाल सबसे पहले 1972 में किया गया था। हममें से लगभग सभी लोग जंक फूड से वाकिफ हैं और इसके लिए किसी भी तरह के परिचय की कोई आवश्यकता नहीं है।

फिर भी, यह बहुत ही दिलचस्प सवाल है कि आखिर इसकी असलियत जानने के बाद भी सभी लोग जंक फूड खाना क्यों पसंद करते हैं? आजकल हम में से सभी जंक फूड के स्वाद का आनंद लेते हैं क्योंकि ये स्वादिष्ट वहन करने योग्य और तैयार मिलते हैं। जंक फूड में कोई भी पोषक तत्व और स्वास्थ्य के लिए आवश्यक पोषक मूल्यों की कमी होती है।

यदि नियमित रुप से इनका उपभोग किया जाए तो ये स्वास्थ्य के लिए बहुत ही हानिकारक है। ये शरीर के ऊर्जा स्तर में कमी करते हैं और अनिद्रा का कारण बनते हैं। यह एकाग्रता के स्तर में कमी करते हैं और घातक बीमारियों; जैसे- कब्ज, गैस, हार्मोन असंतुलन, हृदय रोग, उच्च रक्तदाब, मधुमेह (डायबिटिज़) आदि को निमंत्रण देते हैं।

जंक फूड में पोषक तत्वों की कमी

जंक फूड बहुत तैलीय होते हैं और उनमें पोषक तत्वों की काफी कमी होती है। इस कारण से  उन्हें पचाने में कठिनाई होती है और इसके साथ ही इनके पाचक क्रिया के लिए शरीर में काफी अधिक ऊर्जा की आवश्यकता होती है और व्यक्ति के शरीर में ऑक्सीजन स्तर में कमी करते हैं, जिससे मस्तिष्क का उचित विकास नहीं होता। जंक फूड में बुरे कॉलेस्ट्रॉल की अधिकता होती है और इसके साथ ही यह शरीर को भी नुकसान पहुँचाने का कार्य करता है। पोषक तत्वों की कमी के कारण पेट तथा अन्य पाचन अंगों में खिंचाव होता है। जिसके कारण कब्ज की समस्या उत्पन्न होती है। जंक फूड खाने के कारण हमें वजन बढ़ना, मोटापा, टायफॉइड, कुपोषण, आदि जैसे रोगों का सामना करना पड़ सकता है।

जंक फूड स्वास्थ्य के लिए काफी नुकसानदायक होते हैं और यदि ये नियमित रुप से ग्रहण किए जाए तो बिना किसी लाभ के स्वास्थ्य को नुकसान ही पहुँचाते हैं। हमें पूरे जीवन भर अच्छा, स्वस्थ और सुखद जीवन जीने के लिए जंक फूड का सेवन नही करना चाहिए। कैलोरीज की मात्रा फास्ट फूड में अधिक होने के कारण मोटे व्यक्ति के लिए यह अधिक हानिकारक होती है।

जंक फूड से मोटापा का खतरा

ये सभी तरीकों से सभी आयु वर्ग के लोगों के जीवन, वजन, और स्वास्थ्य परिस्थितियों को प्रभावित करता है। जंक फूड में अधिक मात्रा में कैलोरी पाई जाती है हालांकि, जो भी इस तरह का खाना खाता है उसे जल्दी-जल्दी भूख भी लगती है। जंक फूड से आवश्यक स्तर की ऊर्जा नहीं मिलती है; इस तरह, भोजन करने वाले में जल्दी-जल्दी खाना खाने की प्रवृति उत्पन्न हो जाती है। हमें जंक फूड से जो भी प्राप्त होता है उसमें अस्वास्थ्यकर वसा होता है और उसमें कोई भी अच्छा तत्व नहीं होता है; इस प्रकार, हमें ऑक्सीजन कमी महसूस होती है और जो मस्तिष्क के कार्य करण को बेकार करता है।

जंक फ़ूड खाने के परिणाम

शोध के अनुसार,  बच्चे और किशोर अधिक मात्रा में नियमित आधार पर अधिक जंक फूड खाते हैं और जिसके कारण उनका वजन बढ़ता है और हृदय और लीवर की बहुत सी समस्याएं भी उत्पन्न होती हैं। इस प्रकार के बच्चों को कम उम्र में ही शरीर में अधिक शुगर के एकत्र होने के कारण मधुमेह (डायबिटिज) और आलस्य जैसी समस्याओं का सामना करना पड़ता है। जंक फूड में उच्च स्तरीय सोडियम खनिज के होने के कारण उनका रक्तदाब उच्च होता है। बच्चों और किशोरों को अभिभावकों द्वारा बचपन में ही अच्छी आदतों को विकसित करना चाहिए।

माता-पिता को अपने बच्चों की खाने-पीने की आदतों का ध्यान रखना चाहिए, क्योंकि बचपन में बच्चे सही और गलत को न ही जानते हैं और न ही उसका निर्णय कर पाते हैं। इसलिए वे अभिभावक ही होते हैं, जो बच्चों में सही और गलत आदतों के लिए पूरी तरह से जिम्मेदार होते हैं। उन्हें बचपन से ही अपने बच्चों को खाने की आदतों के बारे में सिखाना चाहिए साथ ही स्वास्थ्य वर्धक भोजन और जंक फूड में अन्तर को स्पष्ट करना चाहिए।

जंक फूड का स्वाद अच्छा होता है, जिसके कारण वो लगभग सभी आयु वर्ग के लोगों द्वारा विशेष रुप से बच्चों और स्कूल व कालेज जाने वाले बच्चों द्वारा यह काफी पसंद किए जाते हैं। आमतौर से बच्चे बचपन से ही काफी जंक फूड खाते हैं जिसके कारण उनमें यह प्रवृति विकसित हो जाती है। इसके साथ अभिभावकों द्वारा रोक-टोक ना होने पर जंक फूड खाने की यह समस्या एक तल बन जाती है और आगे चलकर बड़ी समस्याओं का कारण बनता हैं।

वैज्ञानिकों के शोध के अनुसार यह पाया गया है कि, वे स्वास्थ्य पर बहुत तरीकों से नकारात्मक प्रभावों को डालते हैं। ये आमतौर पर तले हुए पैक खाद्य पदार्थ होते हैं, जो बाजार में मिलते हैं। इनमें कैलोरी और कॉलंस्ट्रॉल, सोडियम खनिज, शुगर, स्ट्रॉच, अस्वास्थ्यकर वसा की अधिकता और पोषक तत्वों और प्रोटीन के तत्वों की कमी होती है।

जंक फ़ूड क्या होता है ?

अगर आसान शब्दों में हम जंक फ़ूड का वर्णन करें तो यह मनुष्य के शरीर के लिए लाभदायक कम और हानिकारक ज्यादा है। जंक फूड तेजी से वजन बढ़ाने वाले खाद्य पदार्थ होते हैं और पूरे जीवन भर शरीर पर नकारात्मक प्रभाव डालते हैं। यह एक व्यक्ति के वजन को काफी बढ़ा देता है, जिसके कारण व्यक्ति मोटापे से ग्रस्त हो जाता है। जंक फूड का स्वाद अच्छा होता है और ये दिखने में भी अच्छे होते हैं हालांकि, शरीर में स्वस्थ कैलोरी की आवश्यकता को पूरा नहीं करता है।

कुछ भोजन जैसे- फ्रेंच फ्राईस, तला हुआ भोजन, पिज्जा, बर्गर, कैंडी, कोल्ड ड्रिंक, आईस क्रीम आदि उच्च स्तर के वसा और शुगर वाले हैं। केन्द्रीय बीमारी नियंत्रक और निरोधक केन्द्र के अनुसार यह पाया गया है कि, जो बच्चे और किशोर जंक फूड खाते हैं उन्हें अलग-अलग तरह का मधुमेह (डायबिटिज) होता है। ये अलग-अलग तरह का मधुमेह शरीर में नियमित शुगर स्तर को नियमित करने में सक्षम नहीं होता। इस बीमारी के बढ़ना मोटापे और अधिक वजन के जोखिम को बढ़ाता है। यह किडनी (गुर्दों) के फेल होने के जोखिम को भी बढ़ाता है।

जंक फ़ूड खाने के दुष्परिणाम

प्रतिदिन जंक फूड खाना हमारे शरीर को पोषण की कमी की ओर ले जाता है। इनमें आवश्यक पोषण, विटामिन, आयरन, खनिज आदि पोषक तत्वों की कमी होती है। यह हृदय संबंधी घातक बीमारियों के खतरे को भी बढ़ाता है क्योंकि इसमें वसा, सोडियम, बैड कॉलेस्ट्रॉल आदि की अधिकता होती है। अधिक सोडियम और बुरा कॉलेस्ट्रॉल शरीर के रक्तदाब को बढ़ाता है और हृदय पर पड़ने वाले अधिक दबाव से भी सुरक्षा करता है। एक व्यक्ति जो अधिक जंक फूड खाता है, उसके वजन बढ़ने का खतरा बना रहता है।

जंक फूड में उच्च स्तर की कार्बोहाइड्रेट पाया जाता है, जो खून में तेजी से शुगर के स्तर में वृद्धि और व्यक्ति को आलसी बनाता है। इस तरह के भोजन को नियमित खाने वाले व्यक्ति का प्रतिबिम्ब और संवेदन अंग दिन प्रति दिन बेजान होते जाते हैं। इस प्रकार, वे बहुत ही सुस्त जीवन जीते हैं। जंक फूड कब्ज और अन्य बीमारियों, जैसे- मधुमेह, हृदय रोग, हार्ट- अटैक आदि का स्रोत है, जो खराब पोषण के कारण होती है।

जंक फूड हमारे लिए काफी हानिकारक हैं और नियमित रुप से इनका सेवन करने से यह स्वास्थ के लिए भी कई गंभीर समस्याएं उत्पन्न कर देते हैं। हमें इसका सेवन काफी कम मात्रा में करना चाहिए और यदि संभव हो तो बिल्कुल ही नही करना चाहिए। जंक फूड खाने वाला व्यक्ति अन्य व्यक्तियों की तुलना में काफी कम भोजन करता है और इसकी वजह से बच्चे मोटापे का शिकार भी हो जाते हैं। इसलिए हमें जंक फूड के उपयोग से बचना चाहिए और अपने जीवन को स्वस्थ तथा सुरक्षित बनाना चाहिए।

Street food places and the majority of food chains and restaurants are serving food in high quantities, thereby reducing the consumption of healthier options. People are now prioritizing taste and neglecting the culinary diversity of traditional food.

Another aspect of the over-consumption of junk food is ordering food on a daily basis due to a busy schedule. Besides that, munching on snacks to satisfy hunger is another bad habit that leads to health issues.
